About him:

Chih-Chieh Lin is currently working on his PhD at the Institute of Food Science and Technology at National Taiwan University (NTU) in Taiwan. During college, he joined a research team that developed a method for simultaneous analysis of fungal immunomodulatory protein and hemolysin of Flammulina velutipes. In addition, a simple process was developed for preparing fungal immunomodulatory protein extracts free of hemolysin. 2 SCI papers about these results have been published in Journal of Food and Drug Analysis (JFDA). In 2015, he received the College Student Research Creativity Award from the Ministry of Science and Technology of Taiwan. One of the projects of the research group aims at developing a routine analytical platform for profiling analysis of complex and prebiotic food oligosaccharides such as isomaltooligosaccharides and galactooligosaccharides. Until now, they have developed a liquid chromatography-tandem mass spectrometry (LC-MS/MS) method capable of identifying linkage and branch patterns of oligosaccharides from degree of polymerization (DP) 2 to 12. The developed analytical platform can be applied to help food industries define the specification and control the qualities of complex food oligosaccharides products. Based on this analytical platform, further research will focus on studying the structures and the prebiotic-efficacy relationship of oligosaccharides.

 

About his talk:

“Profiling analysis of isomalto-oligosaccharides using LC-MS/MS”


The presentation will demonstrate the method of identifying linkage patterns of oligosaccharides by their structural fragments. The qualitative and quantitative profile of isomaltooligosaccharides, the products of the transglycosylation reaction using starch hydrolysate as raw material, will be presented.
