Debora Giordano


About her:

Debora Giordano is a Post-Doctoral fellow at the Department of Agricultural, Forest and Food Science (DISAFA) at the Università degli Studi di Torino, Italy. The Post-Doctoral Fellowship is focused on the project “Cereal supply chains for the production of functional foods”. Her research activity focuses on the analysis of the main bioactive compounds of cereals and pulses and on the investigation of the main pre- and post-harvest factors affecting the antioxidant potential of raw materials and derived food products.

 

About her talk:

“Phytochemical distribution in pearled fractions of x Tritordeum and other small cereals”


The presentation is focused on the distribution of bioactive compounds (phenolic acids, xanthophylls, total dietary fibre, etc.) in pearled fractions of tritordeum. The study compares two varieties of tritordeum with other cereals grown in the same experimental area, in order to weigh up this novel cereal for its potential uses as ingredient for the production of health-valued food products.
