About him:

Dr Marcin Kurek works as the associate professor at the Department of Technique and Food Development, Warsaw University of Life Sciences. His main area of expertise is dietary fiber and its technological functions in various product, especially beta-glucan. As a head of a Project called: Microencapsulation as a technique for increasing application of beta-glucan in the food industry he develops a technology of microencapsulation of beta-glucan as a technique allowing to increase its technological properties and increase its applicability in the food industry. He finished his PhD in 2015 at Warsaw University of Life Sciences entitled: The effect of the additive and the degree of micronization of fiber preparations on the formation of selected quality traits of bread.

During his talk he will provide the audience with information about how beta-glucan could be used as efficient wall material for microencapsulation of anthocyanins from Aronia melanocarpa and sea buckthorn oil Hippophae rhamnoides
