Valérie Lullien-Pellerin


About her:

Dr. Valérie Lullien-Pellerin is a senior scientist in INRA, leading a research group “Grain(e)s” in Montpellier. This group is working on the relationships between the fine composition and structure of cereal grains, pulses or coproducts, their behavior along processing and the characteristics of the corresponding end-products. The group develops multidisciplinary approaches with the aim to improve the safety and nutritional or functional properties of the final products. Valérie Lullien-Pellerin obtained her PhD in molecular biology and microbiology from the University Paul Sabatier (Toulouse, Fr.) and, after a postdoctoral position in medical research, worked about ten years on the relationships between structure and properties of low molecular weight proteins from wheat. She then moved, in 2001, to the studies on the composition and structure of grains and pulses related with the properties of their derived products.

 

About her talk:

"Environmental conditions affect wheat grain texture: consequences on grain fractionation and flour properties"



The respective role on the grain texture of the environmental conditions or of the genes encoding the puroindolines, located in the wheat hardness locus, is examined. Consequences of these parameters on the yield of the different milling fractions and on their biochemical composition are presented. These experimental data coupled with modelling give clues to predict the product quality.
